2 pkgs boneless breast of chicken
2/3 cup bread crumbs
2/3 cup parmesan cheese
2 eggs (mixed with a little water, and garlic powder, salt and pepper)
12 oz. mozzarella
1 large can tomato sauce
2 small cans tomato paste
Clean chicken and cut each breast into quarters. Dip in egg mixture, then coat in breadcrumbs and parmesan (mixed). Fry in oil in skillet, then place in lasagna pan. Spread mozzarella over chicken.
Add water to pan drippings, then put in tomato sauce and tomato paste. Season to taste. Simmer in pan for 5 minutes, and pour over chicken. Bake for 30 minutes at 375 degrees. Serve over pasta.
