Roll-up Sugar Cookies

2 cups sugar
1 cup shortening
3/4 cup butter, softened
2 tsp. vanilla
1 egg
3 1/2 cups flour
1 tsp baking powder
1/4 tsp salt

Mix sugar, shortening, butter, egg and vanilla. Stir in remaining dry ingredients. Chill dough briefly, then shape into logs, wrap in plastic wrap and refrigerate.

Slice off cookies and bake at 375 degrees until golden. Keep excess dough wrapped and refrigerate and just slice off what you need.
