6 T butter, softened
1/4 cup cocoa powder
1/3 cup strong coffee
3 cups confectioner's sugar
1 tsp vanilla extract
Combine the cocoa and the confectioner's sugar and set aside. In a mixer, whip butter, coffee and vanilla. Gradually add in cocoa/sugar mixture until spreading consistancy.
Very good on Starlight Yellow Cake!

Cream Cheese Frosting
1 stick butter, softened
1 8-oz package cream cheese, room temperature
2 tsp vanilla
4 cups confectioner's sugar
Mix together the butter, cream cheese and vanilla. Beat in sugar until spreading consistancy. Makes enough for a 2-layer cake.

Whipped Butter Frosting (Buttercream)
1 cup soft butter
1 cup sugar
2/3 cup warm (not hot) cream or milk
2 tsp vanilla extract
a dash of salt
Whip butter and sugar in a large bowl, until light, on high speed. Continuing on high speed, slowly add cream or milk, vanilla and salt(put into milk). Whip at least 5 minutes until the consistancy of whipped cream.
It may seem runny, but be patient- it will work!

Orange Cream Cheese Frosting
3 8oz. packages chilled cream cheese
¾ c. unsalted butter, room temperature

5 tsp. fresh orange zest
1 ½ tsp. vanilla extract
½ c. chilled sour cream
1 ½ tsp. orange extract
Orange Food Coloring (optional)
In large bowl, beat cream cheese and butter with electric mixer until well blended. Beat in sugar, orange zest and vanilla. Beat in sour cream and food coloring, if desired. Can be used as a glaze, or cover and refrigerate approximately 30 minutes or until frosting is firm enough to spread. Frost by spreading over sides and top of cake.
