Rice Pilaf

1 carrot, diced 1/4"
1 celery stalk, diced 1/4"
1/2 large onion, diced 1/4"
2 T. olive oil
1 1/2 c. chicken broth
3/4 c. rice
salt and pepper to taste

Saute the carrot, celery and onion in the olive oil until the onions are translucent. Add the broth and bring to a boil. Add the rice, salt and pepper, stir, and simmer covered on low heat for 20 minutes.

For an extra zip, add lemon zest.
