Crab Cakes

1 lb crab meat
1/2 cup grated parmesan cheese
1/2 cup bread crumbs
1 T fresh chopped parsley
2 T dijon mustard (optional)
1/2 tsp garlic powder
2 eggs
1 tsp tabasco sauce
2 tsp lemon juice
1 stick of butter

Thaw crab meat, if frozen, and drain.

Mix all ingredients together except for the butter, and form into 2 oz. patties

In a hot skillet, melt the butter. Add the patties and cook for 2-3 minutes each side until golden brown.

Remove and serve. Makes three servings of 3 patties each.
