Beef Stroganoff

2 to 2 1/2 lbs beef- I usually use an inexpensive cut of sirloin
3 T. flour
1/2 tsp salt
1/4 tsp pepper
3 T. oil
3 onions, thinly sliced
1/2 cup tomato juice
1 can beef consomme
1/2 tsp sugar
1/2 cup sour cream
1/2 lb. sliced mushrooms
3 T. dry white wine, or more to taste

Cut meat into thin strips. Toss in flour, salt and pepper. Brown meat, onion and mushrooms in oil. Add tomato juice, consomme and sugar. Reduce heat and simmer until meat is tender. Blend in sour cream and wine- heat, but do not boil.

Serve over egg noodles.

Made this tonight, with whole wheat egg noodles. Oh my, I had forgotten how GOOD it is!
