Hominy and Chicken Casserole

4 cups Cubed stuffing mix
2 cups Chicken, cooked and diced
1/2 Red bell pepper, chopped
1/2 cup Parsley, chopped
1 can Cream of mushroom soup
1 can Whole kernel corn
1 can Golden hominy, 15oz
1 cup Cream or milk
1 can Green chiles, 4-1/2 oz
2 tsp Cumin
1 cup Monterey Jack cheese

Combine stuffing and next five ingredients in large bowl. Stir together
remaining ingredients (except cheese)and combine with stuffing mix. Pour
into lightly greased 2-quart shallow baking dish. Cover lightly with foil
and bake at 350 degrees for 35 minutes. Uncover, sprinkle with cheese and bake an
additional 5 minutes or until cheese is melted and bubbly
