Whoopie Pies #1


1/2 cup shortening
1 cup sugar
1 egg, beaten
2 cups flour
1/2 cup cocoa
1/2 tsp baking soda
1/2 tsp salt
1 cup milk
1 tsp vanilla

Cream the sugar and the shortening. Add the egg. Sift the dry ingredients and add these alternately with the milk and vanilla. Drop the batter in equal spoonfuls onto a greased cookie sheet, leaving room for them to spread. Bake in a preheated 425 degree oven for 7 minutes and remove to a wire rack to cool.


3/4 cup shortening
3/4 cup confectioner's sugar
1/2 cup marshmallow fluff

Mix shortening, sugar and fluff in a bowl until well combined.

When cookies are completely cooled, pair them up in equal sized pairs. Spread half of pair with filling and sandwich them together. Can be wrapped in plastic wrap to keep.
