Coconut Rice

1 1/2 cups chicken broth
1 cup coconut milk
2 tsp sugar
1 tsp kosher salt
1 cup basmati or jasmine rice
2 T fresh lime juice
1 T unsalted butter

Bring broth, coconut milk, sugar and salt to a boil; stir in the rice. Cover, reduce heat to low, and simmer 15 minutes, or until the liquid is absorbed. Remove from heat and let sit 5 minutes before stirring. Finish with lime juice and butter. Fluff with a fork and serve.
